Fry the sausages until browned on all sides. Heat oil in a large heavy based saucepan over medium heat. Add stock, tomatoes and lentils then bring to boil. Reduce heat to low and simmer for an hour, adding a cup of water if it becomes to thick.

  1. Heat a large non-stick frying pan on a high heat with some oil. Fry the sausages until brown all over. Then cut them into pieces and set aside.
  2. Put some oil in a large pot. Roughly chop the onions and crush the garlic cloves. Put them in the pot and fry for 2-3 mins or until the onion starts to soften.
  3. Peel the potatoes and chop them into medium sized pieces. The larger you chop them the longer they'll take to cook, so don't make them too big. Roughly chop the peppers. Add both the potatoes and peppers to the pot and mix well.
  4. Add 1/2tsp salt, 3 healed tsp paprika, 1-2 tsp chilli flakes, 3tsp dried mixed herbs, 2 heaped tsp ground coriander, 1 heaped tsp ground cumin, 1 heaped tsp onion powder and 2tsp ground black pepper to the pot. Mix well.
  5. Add the chopped tomatoes and a generous squeeze of tomato paste/ketchup. Mix well. The add the water, stock pots/cubes and sausages. Mix well again.
  6. Add the lentils to the pot and mix well again. Then put the lid on the pot. Turn it down to a low heat, if you haven't already.
  7. Simmer for 90 mins, or until the potatoes and lentils are soft. Serve in bowls.
  8. Done and ready to serve!
