Arrange chicken in one layer in a roasting pan; pour the marinade evenly over the top of the chicken. Arrange the chicken on a baking sheet, discarding the marinade. You make your marinade by adding all the Mojo Sauce ingredients in the blender. You then divide it into two halves.

  1. In a large pan, add the oil and heat over medium heat. Add the seasoned chicken to the pan and cook on both sides for a total of 30 minutes.
  2. Remove the chicken to a plate and add the peppers to the pan and begin to sauté them in a small amount of the chicken fat. As they become soft, add the onions and sauté them as well, until they become translucent in about 2-3 minutes.
