Ingredients and seasonings required exist for prepare
- Use 3 cups peeled and diced potatoes
- Use 1 cup finely chopped onions
- Prepare 1 teaspoon minced ginger
- Prepare 1 teaspoon minced garlic
- Prepare or
- Take 1 tablespoon ginger garlic paste
- Prepare 1 teaspoon mustard seeds
- Take 1 teaspoon cumin seeds
- Prepare 1 sprig curry leaves
- Prepare 1/4 teaspoon asafoetida powder
- Prepare 1/2 teaspoon turmeric powder
- Prepare 1 teaspoon coriander powder
- Use 2 tablespoons chopped cilantro leaves
- Take Salt as per taste
- Prepare 3 tablespoons cooking oil
Once onions are cooked, add all the dry spices ( except salt) , mix well and now add the potatoes. Add salt , mix well and cook them oil on low to medium heat. Cover the pan with the lid and cook the potatoes for few minutes, stirring occasionally. Simmer for a few more minutes and turn off the heat.
Instructions to make Spiced Potato Stir Fry (Alu Ki Sabzi)

- Heat 3 tablespoons of oil in a saucepan
- When the oil is hot, add in a teaspoon of mustard seeds and a teaspoon of cumin seeds carefully. Wait till they crackle.
- Add in a sprig of curry leaves
- Add in a cup of finely chopped onions and sauté till they get translucent
- Now add in the minced ginger and garlic or the ginger-garlic paste and cook till the raw smell fades away
- Add in 1/4 teaspoon of asafoetida powder, 1/2 teaspoon of turmeric powder,1 teaspoon of coriander powder and salt as per your taste
- Add in 1 tablespoon of finely chopped cilantro leaves. (Leave aside 1 tablespoon of cilantro leaves for garnishing)
- Mix well and add in 3 cups of peeled and diced potatoes
- Cover and cook till the potatoes are cooked well. Keep checking, as the potatoes may stick to the bottom.
- There’s no need to add water, the potatoes will cook with the own steam they release. Water will make the dish mushy.
- When the potatoes are cooked, garnish with cilantro leaves and serve hot.
- This potato stir fry can be used for stuffing dosa(check out my recipe for dosa). (Dosa stuffed with potatoes makes a dish called ‘masala dosa’.
