  12. Take 1 tbsp minced garlic
  13. Take 2 tbsp coconut milk
  14. Prepare 2 tsp lemon juice

  17. Take 1 tsp brown sugar
  18. Take 1/4 cup peanuts
  19. Use 1 tsp red chilli flakes

Lay the tofu in a single layer between two stacks of paper towels. Press down to absorb any remaining liquid. Make the marinade: In a small bowl, whisk the ginger, garlic, curry powder, turmeric, fish sauce, lime juice, brown sugar, and sriracha until smooth. In a large bowl, whisk together coconut milk, lime juice, soy sauce, fish sauce, garlic, ginger, sambal oelek, brown sugar, and turmeric until smooth.

Instructions to make Tofu Satay with creamy peanut sauce and tangy cucumber salad:
  1. For the marinade, add soy sauce, brown sugar, vinegar, minced garlic, red chilli powder, rice flour and 1 tbsp coconut milk in a mixing bowl.
  2. Cut the tofu in thick long slices and put the slices in the marinade and leave it for 30 minutes.
  3. After 30 minutes, put each slice of tofu in skewer and keep aside.Now place the toasted sesame seeds on a plate. Roll and coat alternate sides of each tofu slice with the sesame seeds.
  4. Heat 1 tsp oil in a pan.Shallow fry each tofu slices, till all the sides are cooked properly. Remove from pan and keep aside.
  5. For the cucumber salad, put cucumber slices, peanuts, sesame seeds, chilli flakes, brown sugar and 1 tsp lemon juice in a bowl with a pinch of salt. Mix and keep aside. Sweet and tangy cucumber salad is ready.
  6. For the creamy peanut sauce, mix the peanut butter,2 tbsp coconut milk, minced garlic, minced ginger, lemon juice, crushed roasted peanuts and a pinch of salt in a bowl and set aside.
  7. Plate the tofu satay with creamy peanut sauce and tangy and sweet cucumber salad. Serve.
  8. Done and ready to serve!
