Heat half the butter and oil in a large flameproof casserole dish, add onions (eshalots) and mushrooms, cook stirring until onions (eshalots) are golden brown. Add bacon to dish, cook, stirring until browned all over. Remove and drain on absorbent paper. Season the beef with salt and freshly ground black pepper.

Instructions to make Beef and Bacon hot-pot:
  1. Remove rind from bacon and fry without browning, remove from pan and cut into 1 inch pieces
  2. Add onion to pan and fry until transparent
  3. Add beef and fry until cooked, return bacon to pan
  4. Add the tomatoes, sugar, salt and pepper, worcestershire sauce, herbs and stock cube, bring to boil, then simmer for 15-20 minutes. (The sugar helps remove the acidity from the tomatoes and is optional.)
  5. Heat oven to 180C. Place half of the meat mixture into an ovenproof casserole.
  6. Arrange half of the potatoes over the top
  7. Carefully add remaining meat mixture
  8. Arrange remaining potatoes on top,season with salt and pepper, sprinkle with melted butter or olive oil
  9. Place in oven, no lid, for 1 hour until potatoes are cooked and golden brown
  10. Serve with peas or green beans
  11. Done and ready to serve!

Heat a large casserole dish until very hot then add the oil and a small knob of butter. Place the beef, onions, carrots and flour in a baking dish, season lightly and toss to mix well. Pour in the stock then add the Worcestershire sauce, baked beans and bay leaves. Stir to mix well and arrange the sliced potatoes on top of the meat mixture. Add the bacon and sliced onion, together with the chunks of carrot, celery and swede.
