  1. Preheat oven to 350
  2. Line 1 (12 cup) muffin pan with cupcake papers
  3. In medium bowl, sift together flour, sugar, baking soda, salt & cocoa powder
  4. In a large bowl, beat together oil, buttermilk, egg, food coloring, vinegar & vanilla on low speed until blended
  5. Add dry ingredients; beat on medium speed for 2 minutes
  6. Pour batter evenly into cups (batter will be very thick)
  7. Bake 20-22 minutes, turning pan halfway through
  8. Cool completely on cooking rack before frosting!
  9. Done and ready to serve!

In another bowl, beat together the butter and sugar on medium-high speed with an electric mixer until fluffy. Add in the eggs, one at a time, beating well after each addition. In a large bowl or stand mixer, cream together butter and sugar until light and fluffy. Mix in egg white and vanilla, followed by salt and baking powder. Alternate additions of flour and yogurt until they are completely mixed in with no streaks remaining.
