  1. Use 1 serving Soba Noodles *Today I used Cha Soba (Green Tea Soba Noodles)
  2. Prepare 1/2 cupful Cucumber & Lettuce *sliced into thin strips
  3. Take 1/2 Avocado *cut into bite-size pieces
  4. Prepare 1/2 sheet Toasted Nori *torn into small pieces
  5. Prepare Spring Onion *finely chopped
  6. Prepare Toasted Sesame Seeds
  7. Prepare 1/3 cup Mentsuyu (see recipe)
  8. Prepare Mentsuyu Sauce
  9. Take 1/4 cup Dashi Stock *OR 1/4 cup Water & 1/8 teaspoon Dashi Powder
  10. Take 1 & 1/2 tablespoons Soy Sauce
  11. Prepare 1 tablespoon Mirin

Take it off the heat and set aside, allowing it to cool completely before use. (Optional) Garnish with a sprinkling of aonori powder or thinly sliced nori for extra flavour. Slice all vegetables into fine/thin strips. DO NOT add salt into the water. Drain, rinse well in COLD water, and drain well again.

Instructions to cook Avocado Soba Salad with ‘Mentsuyu’ Sauce:
  1. If you make Mentsuyu for this dish, combine the ingredients in a heat-proof bowl, and bring to the boil in the microwave, then cool. *Note: This process can be done using a saucepan. Chill the sauce in the fridge. (see recipe)
  2. Cook Soba Noodles as instructed. DO NOT add salt to water. Drain, rinse well in COLD water, and drain well again.
  3. Add thinly sliced Cucumber and Lettuce to the drained Soba, and combine. Place in a deep plate or bowl, add Avocado, top with Nori, sprinkle with some Spring Onion and Toasted Sesame Seeds.
  4. Pour chilled Mentsuyu Sauce over and enjoy.
  5. Done and ready to serve!
