Simple Way Make Recipe RICE COOKIES or TIL PITHA that is Really Delicious, Addictive}

Ingredients and seasonings must exist in prepare
  1. Use 2 Kgs of Sticky Rice (Bora rice in Assamese)
  2. Prepare 1/2 Kg Black sesame seeds (Til)
  3. Prepare 1 Kg Jaggery (Gur)

Make a smooth rice powder and to give the pitha a nice texture, using a cling wrap cover the rice flour for an hour or so. Make sure that the water is not completely dried off or do not leave the rice to dry in the sun or below the fan. Keep it in a cool dry paste. Lightly roast the sesame seeds, pound it slightly and remove its outer shell.

How to cook RICE COOKIES or TIL PITHA:
  1. MAKING THE RICE OUTER LAYER : Wash and soak the rice for an hour. Strain rice and spread it out on a parchment paper or newspaper and let it dry partially
  2. Grind the rice to a very fine powder and then sieve it to get fine rice powder
  3. Now, press the rice powder in the container to make it air tight and cover it with a wet cloth. This layer will be the outer shell of the Pitha.
  4. MAKING THE FILLING : For the filling, wash and strain black sesame seeds, and let it dry. Roast the sesame seeds in a pan or wok until it gives out a nutty fragrance. Coarse grind the sesame seeds.
  5. Melt jaggery in a pan, and add it to the ground sesame seeds. Filling for the pithas is ready.
  6. MAKING THE FINAL VERSION OF SWEET : Heat a tawa to the required temperature
  7. Scoop out some of the prepared rice flour, and spread the rice flour on the pan and press it gently with your fingers.
  8. Now put some sesame filling. Take care not to overfill. Roll up the pithas to your desired shape and gently push it to the edge of the pan and let it finish cooking while you continue making the next pitha.
  9. Enjoy! Serve the cookies with a hot cup of milk tea.
  10. Done and ready to serve!

How to make Til Pitha: Soak the rice overnight in water. Drain excess water and grind it carefully. Roast sesame seeds and pound them to remove their outer shell. Cut Jaggery into small chips and combine the sesame seeds with it. Heat the griddle and spread the rice batter over it to the size of Puri with the help of a ladle.
