Add annatto powder and oxtail broth. Toss-in string beans and calabasa (kabocha squash). In a large stock pot over medium high heat, add the vegetable oil and sear the pieces of meat until each side has a nice brown crust. This should be about one minute on each side.

  1. Boil the oxtail for 2 hours or until tender. If you have pressure cooker, cook it for 45minutes max. Then add the ox tripe and onions and boil for another 1 hour.
