In a small mason jar, shake up the lemon juice and olive oil, and pour evenly over the chicken. Sprinkle the chicken evenly with the Garlic and Herb Seasoning. Nestle chicken thighs in between the veggies on the baking sheet and top each with one or two lemon slices.
