Once butter is melted, carefully add beef. Stir in flour, then slowly pour in beef broth while constantly stirring. Add beer, water, tomato paste, bay leaves and thyme, stir well. Then add the beef back in.

Instructions to make Hearty beef soup:
  1. In large dutch oven, brown meat and set aside. In same pot add 1 tablespoon vegetable oil and saute carrots for 3 minutes.
  2. Add onions and garlic and cook 2 minutes. Then add all the spices.
  3. Return beef to pot. Add in beans, tomatoes and potatoes.
  4. Pour in broth and bring to boil. Reduce heat to simmer and cook 20 minutes.
  5. Add in kale and cook another five minutes.
  6. Once served I top each serving with some grated parmesan cheese.
